I've tried deep fried turkey. It's never dry.

There are ways of making white turkey breast meat moist.

You're right. Slow for one thing. Re-basting helps too. Also, dont cut the turkey til its sat for 30 minutes!

I never heard the 30 minute wait time before.

That goes for a lot of things! If not, when you cut into it, the juices run out, and makes it dry. I wait at least 20 minutes on a ham and a chicken. I also wait at least 5 minutes after a steak or grilling or frying something.
