I was told hares are edible only for coyotes.


Hares are edible but they need to be soaked in brine solution overnight or longer.... like a bucket of brine and fully submerged. My mate has them all over his property and swears by the brining treatment.

You should really do the same with any wild upland game. The salt water brine breaks down the blood clots that can form after the animal has been riddled with birdshot. Wild cotton tails, grouse, pheasant, woodcock all get a 24hr brine bath.

Hares aint meant to be ate by people. I have had ring necked pheasant and grouse in the oven thirty minutes after they were shot. They tasted good.

I didn't use brine on the ruffed grouse we were given.

My mate hits them with a scoped .22 mag in the head... he just prefers their taste with a bit of salt water.



I never brined my squirrels or wild birds though. Just going off his recommendations.

That's your prerogative. It depends entirely how and when they were field dressed. Wild game can have blood in the meat. That's what gives it that so-called gamey taste that some people complain about. Brining for 12 to 14 hrs helps get rid of it. Plus wild bird such as Pheasant or grouse has almost no fat. Soaking it in liquid helps keep it moist... Also venison should be brined as well.

I rinse them again after I was given them..



It was the whitest white meat I've ever had..



It made terrific deep fried chicken strips.

They manufacture that designed stuff for fish and chip cafes. Most fish and chips shops use unprinted food grade paper wraps
