I don't blame you. Still medium rare after 26 hours of cooking time and 4 hours of warm up at 135F followed by 2 minutes per side and a minute on the edges searing in a cast iron skillet. Top that with caramelized onion and garlic béchamel/gravy for the mashed potatoes and roast, green beans and carrots. Not to shabby at all.
