Brisket (14 lbs) won't come off the pit until 9 tonight. That will be a 12 hour low and slow with the pit running 200-250F. Should fall apart. Gonna chill it overnight and then tomorrow get the slicer out and slice it up. Can't wait.

Beef jerky is meant to be a real food... Not snack food.





19th and 20th century people put the dried meat into a soup so that it will feed more than one person.





Hence we have a beef jerky soup in the menu. ac_biggrin

I know before refrigeration, every culture preserved meat that way.


The method and end result varies.



The way we are doing it wouldnt work in Taiwan because the meat spoils.





The beef jerky in stores has been made in a warm indoors drier..



It just doesnt have the proper taste.

Taiwan is semi tropical..



But, they used salt to preserve meat back then and it worked.

It was delicious, probably one of the best yet. Super tender. It would be tender regardless of which direction it was sliced. Got out the meat slicer for this one. Nice having consistent slice thickness. Potato salad and baked beans as the sides. The homemade BBQ sauce was really good.



It cooked for 11 hours on the pit. Took it off at 8. I took the pics of the brisket 2 hours after it came off. There was still steam coming off when I opened the foil. So it got a few more hours cooking after it came off the pit.

I made fish tacos on Saturday.



Then made a pot of pinto beans that cooked for 17 hours, with a ham bone and ham cooking in it. Fried up salmon patties to go with it.
I've come here to chew bubble gum, and kick ass. And I'm all out of bubblegum.
