because funnily enough, they taste better...
I use banana in the pancake batter... my pancakes are to die for.
Using natural fruit instead of cane sugar works... it just does.
Cane sugar is the king of juke food because is gives high calories only whereas whole fruit ground up gives you fibre and vitamins and minerals.
I used to make these little muffins with grated carrot and plenty of raison or sultanas and cinnamon and they were sweet Yummy.
I use oil as well...I don't scrimp on butters and oils.
I believe the secret to longevity is, if your grandparents lived into their 80s then follow their diets.
roasts, stews, homemade desserts,... plenty of greens.

My Filipina Aunty came to Oz not understanding how to make cakes.... she made one anyway and left out the butter (or something) and blow me down, her cake tasted great. It was really different.
She loved cooking and was quite good at it..
When cakes are rich, you're supposed to only eat very slim slices.
I like anything with cream and custard... I like Italian desserts because they lace their desserts with Liqueurs.

Anything sweet makes me sick. But, old Herman is sweet enough as it is.

The batter is made of self raising flour, egg, milk. I like to use wholemeal flour. I use extra bicarbonate soda in the mixture too...
You know, you can blend up an apple instead of banana. If you want to spice it up, add cinnamon.
Don't use white sugar in the mixture... it doesn't need it, Banana is sweet enough... Use maple syrup by all means when you go to eat it....

It is yummy when you dump cane sugar and use real whole fruit as your natural sweetener.
Even sweet candy/lollies now come cane sugar free... They use Stevia. Look that up in google.
Pancakes are very versatile. In fact, we met a beautiful French Jewess who started a crepe business at Fremantle Markets well over 30 years ago. She sold that business eons ago but it still bears her name. Michelles Crepe Suzettes.
