Title: So, what's fer dinner?

...Tonite, I'm having fresh sockeye salmon dipped in Teriyaki sauce with potatoes, zucchini and Spanish rice.

Kinda like this:

I haven't eaten anything KFC in almost 2 years. Ever since I got a severe case of food poisoning from it, I can't get it past my nose without gagging.

Hubby made it with : canned tomatoes, onions, brocoli, carrots, scallots. Our daughter loves pasta dinners. Her favorite is mac and cheese lol

Pizza, I loove pizza. I used to make deep dish pizzas for my family often but then realized that all that processed meat is not good for you.  I suppose I could make a veggie pizza but then what fun would that be?

Cool a food thread. I enjoy cooking. I'm not a pro by any means. I use my Weber for almost everything. Never gas, always charcoal. I love to stuff a whole chicken with lemons or limes, then roast it with wet mesquite, hickory chips. Comes out so moist, yet fall apart goodness. I had fish and chips last night, made from fresh Mahi. From a restaurant in town. Off the hook. While I love to eat, I recognize the importance of eating right, and excersise. I am 5'9" 148. Ride my bike all over the place, and participate in another beloved activity. What's your favorite to cook?

I like cooking stews and chilis in the slow cooker and baking goodies. The  only down side of baking goodies is that they don't last long.  lol

Hubby and I had ribs at Rib Fest at the PNE last summer. The first thing he said was "Yours are better"  :laugh:  I make a brown sugar/ketchup etc sticky sauce and slow cook.

My friend Dave showed me this one. Put the racks into a large pot. Put fresh and dried spices as you like and fill with water. Boil for 45 mon. Remove ribs take to the Bar B Q and smoke for an hour. Sauce after what ever you like. The ribs pick up the herb flavor, add in the smoke and sauce, and you're golden. Fall off the bone goodness

Chuck pot roast in stock and malbec with browned onions, carrots and celery, sliced baby bellas, fresh sprigs of rosemary and thyme.



Pork loin roast rubbed in spices and served with mango chutney.



Saffron rice with toasted pine nuts, currants, and fresh mint.

I love tuna and salmon, also basa.  Nothing like a nice toasted fish sandwich on days when you don't feel like cooking.

It needs to be cooked slow in low heat and for hours covered in the oven in a dutch oven, Fash, while it cooks in stock, red wine, vegetables, and herbs like rosemary and thyme and then it should be off-the-bone tender. It can be yummy when done right. You don't want it tough.

I've had lamb chops as a kid, I liked them before I knew they were lamb.....I've also had sheep, which I really didn't care for.

If you cook real lamb too long, it dissolves, it's so tender.



If you're cooking Mutton, (sheep 2 years and older) then yeah, slow cooking is the go.



When my aunty was living with me briefly, I cooked a lamb leg chop stew so she had something nice to come home to after work. That's the large pieces of meat with the bone in the middle and no fat, and because I didn't check it and cooked it a bit too long, most of it ended up a thick gravy and she thought we cheated her out of her chop.



Lamb shank broth is one of the nicest soups you can make because it has tiny bits of barley in it. These days though, grocers charge like a wounded bull for lamb shanks.

Yes, it is called crayfish here but when it's sold overseas to the China and the USA it's Rock Lobster. I believe Canada has a Lobster industry too.

Ingredients...



Olive oil (extra virgin)



High quality fatless mince beef, 2 kg (4.4 lbs)



5 small onions



4 carrots



Brown that all up...



add a jar of tomato sauce, (I used Leggos this time) + two cups of water... or less.



Cook for 1 hour on simmer



add 2 diced zucchini and 1 diced red capsicum (bell pepper)



Cook for another 30 minutes on simmer



serve up with Parmesan Cheese
