I made tortillas tonight...they were yucky....its true to cook it dry...
...anyone got a decent tortilla recipe??? Cook style?,
Fry a tortilla in oil till its crispy.
put a little bit of refried beans on it
and then some mexican cheese
heat in the microwave for 40 seconds.
Put guacamole and/or salsa on top.
(guacamole--avaocados, tomatoes, onions, garlic and salt)
I don't care about the toppings..ivr got that covered...im getting my tortilla cooking on....
I used flour, salt, water and oil...
Tonight we having fajitas, senorita.
No cooking skills here...

Cast iron skillets after a rolling pin is taken to it works better than normal domestic cook wear.
There are actual tortilla presses too. I've never seen anyone myself actually use one bit they're cheap and are meant to deliver a uniform tortilla to grill.

I've been in the presence of older Mexican tortilla makers before. Quite impressive how much of a skill it is. One lady was 80 something and completely blind. She did it purely by touch and smell, and swatted one of her grand kids with a spatula when they tried to sneak a warm tortilla out of the tupperware container. She heard EVERYTHING. ac_biggrin

Mexican food ranges in type and flavours.
Most of us just eat the Texas version of Mexican food which can be pretty limited in variation and flavours.
I have been to Mexico many times. Some things I really like, some are okay and others I would not feed to a stray starving dog.

Fair enough. I'm not too crazy about Chinese foods myself but some things have been good.

Good, but I add shredded lettuce too.
This post is about soft tortillas. So if anyone got a recipe or cooking tips it help until I can perfect the art of my tortilla making....

They're okay at the bunk house, but never at home.
Just eat the fucking taco. If it falls apart, that's what plates are for. Just shove the thing into your mouth and eat it.

When I do tacos I like a soft tortilla. Either corn or flower. It helps a lot if you zap them in the microwave for about 15 seconds first. Gets them warm and softens them up more.
I wouldn't know how to make my own tortillas though :sad:
Fajitas are nice once in a while.

Hard tacos are my favorite. It does require a certain technique of eating them, and some still falls lol. The trick is in the way to hold it, kinda cupping the rear of it lol.
