Berry Sweet

I'm making tortellini with jalapenos, tomatoes, broth and coconut milk.  More of a soup but I have to half the tortellini cause Lo doesn't like the base.

I'm making chicken cacciatore tonight with ruffed grouse we had in our freezer.

I had chicken noodle soup last night and toasted cheese. Dont know on tonight yet, depends how I feel when I get off. I do feel a lil better today, yesterday may have been the worst day.
I've come here to chew bubble gum, and kick ass. And I'm all out of bubblegum.

Chicken soup is good, but I would recommend something with lots of garlic in it..



Perhaps a garlic pesto and and dip sweet potato fries wrapped in kale, arugula or spinach in the pesto.

Garlic? For the healing properties? Hmmm, I hadnt heard of this for a cold.



The cold is breaking up, mostly in my chest now. At least my ears quit hurting lol.
I've come here to chew bubble gum, and kick ass. And I'm all out of bubblegum.

Garlic is one of the best foods you can eat to prevent or fight off a cold.

I just noticed this soup has garlic in it, but its at the bottom of the list.



Im gonna have to look up a pesto recipe lol.

lol, my children kept bugging me for fish tacos..



I didn't know how to make them, so I looked up a recipe.



INGREDIENTS

3 tbsp. extra-virgin olive oil

Juice of 1 lime

2 tsp. chili powder

1/2 tsp. ground cumin

1/2 tsp. cayenne pepper

1 1/2 lb. cod (or other flaky white fish)

1/2 tbsp. vegetable oil

kosher salt

Freshly ground black pepper

8 corn tortillas

1 avocado, cubed

Lime wedges, for serving

Sour cream, for serving



FOR THE CORN SLAW:

1/4 c. mayonnaise

2 tbsp. lime juice

2 tbsp. chopped fresh cilantro

1 tbsp. honey

2 c. shredded purple cabbage

1 c. corn kernels

1 jalapeño, minced



DIRECTIONS

In a medium shallow bowl, whisk together olive oil, lime juice, chili powder, cumin, and cayenne.

Add the cod, tossing the filets in the mixture to evenly coat. Let marinate for 15 minutes.

Meanwhile, make the slaw: In a large bowl, whisk together mayonnaise, lime juice, cilantro, and honey. Stir in cabbage, corn and jalapeño. Season with salt and pepper.

In a large nonstick pan over medium-high heat, heat vegetable oil. Remove the cod from the marinade and season both sides of each filet with salt and pepper. Place the fish on the pan, flesh side down. Cook until the fish is opaque and cooked through, 3 to 5 minutes per side. Let rest for about 5 minutes before flaking the fish with a fork.

Assemble tacos: Serve fish over grilled tortillas with corn slaw and avocado. Squeeze lime juice on top and garnish with sour cream.

That is what I was lacking, a good slaw recipe for the top. I may try that one  :thumbup:

I would say have 'em on Taco Tuesday, but with fish, its Fish Taco Friday lol. Mmmm fish tacos. Shrimp goes good in 'em too. Salmon prolly as well, but dont think I've done salmon.

It was a learning experience for me..



I stepped outside my food comfort zone because of pressure from my family.
