Had a breakfast pizza this morning made with wild boar sausage, eggs, cheese. Tasty.



Got a brisket marinating. Going to put it on the pit in the morning for a 10 hour slow cook. Going to wait until Christmas day to eat it. Got the tamales in the freezer for Christmas eve. No plans on making any desserts at this time. That could change, we shall see.

We have some venison jalapeno sausage links that we will cook along with the brisket to eat tomorrow.

None as far as I know. Just the wife and I. Maybe our son. Grand daughter Christmas night for a couple of hours. That is it.

Wrapping in foil in 2 hours, on the pit another hour and that will be it. Off at 8:15 this evening.

It is done. Cut a couple of little pieces to sample. Knife went through it like butter. May be one of the best yet.

I've seen smoked beef before and what you got in this pic is pretty much perfection.
