When it comes to cooking game meats, I follow directions carefully. I cook cornish game hens but when I do, I want to make sure I'm doing it properly by following the recipe closely.

But, Cornish hens are not wild game.

I just ordered some Green Chile Chipotle Relish. Should be tasty and spicy. Sounds good.

tomatoes, sugar, green chiles, chipotles, adobo, vinegar, onions, salt, paprika, soybean oil and spices.

Got it from Kent Rollins web store. He is a chuck wagon cook/chef that puts out a lot of cooking videos. Has an old west style chuck wagon with an old wood burning stove to cook on. He has been on the food network a bunch of times.

It's not my specialty and I am using canned sauce(Renee would pull her hair out if she saw that).

I had turkey tacos, yiyiyiyiyiyiyiyiyi!!!! Playing salsa music while I cooked and ate lol.... still going lol, so is the moonshine lol.

Fash, you know best what you like. There are many cornish game hens recipes online. They go well with orange sauce or glaze, cherries, and even plums. Pick what suits your taste. Here is one:



JUICY CORNISH GAME HENS

Recipe by Chuck in Killbuck



PREP TIME: 15 mins   TOTAL TIME: 1 hr

SERVES: 4



INGREDIENTS

4 tablespoons butter

3 tablespoons honey

4 teaspoons chili powder

1 tablespoon orange juice

2 Cornish hens, halved

salt and pepper, to taste



DIRECTIONS

Preheat oven to 350°F.

Melt butter and stir in honey and chili powder; mixing well.

Stir in orange juice, salt and pepper and remove from heat.

Cut each hen into two halves.

Rinse well and pat dry with paper towels.

Place hens in baking dish, skin side down, and place in oven for 6-8 minutes.

Turn hens over and baste generously with all of the mixture.

Bake for approximately 45 minutes or until well browned.
