I didn't know cheese curds were processed?



Some places use mozzarella.

I'm assuming they are because cheese curds are processed from soured milk, so I'm pretty sure they aren't fresh.



BTW like most foods, not all mozzarella is created equal. Some of it is more "processed" than others.

Renee, curds are simply the first part of the process of making cheese, when the whey is separated. In other words, cheese curds are merely, well, a juvenile cheese.



It's tasty, squeaky, and fun to munch on out of the bag.



And, like all cheeses, it melts when heated (as in smothered under mounds of fries and ladlefuls of gravy).



Fash: do not--repeat: DO NOT--use mozzarella (or anything other than cheese curds) on poutine. It's a waste of good fries and gravy.
