I was given a cactus leaf today. I had to look up online what to do with it and discovered it's a Mexican cactus leaf and there's a variety of ways to cook it.  I had no idea you could eat this and in several ways. I might cook it and add it to scrambled eggs tomorrow for hubby and I. Has anyone else eaten cactus leaf? Is it good?

Hello Ms. Annie, these are the kind of threads I like best..



I like learning new recipes, but I have no idea how to cook cacti.



I will do a quick google search and post what I find..

Here is one Ms. Annie.



Ingredients

1 cactus leaf, French fries cut,

2 tablespoons butter,

1 teaspoon minced garlic,

1/2 teaspoon seasonings (Montreal)



DIRECTIONS:



Saute cactus in butter for 4 to 5 minutes; stir in garlic and seasonings and continue saute for 1, 2 minutes. Serve! How does it taste? Yummm ! Lots of vitamins...so eat it up! :))))

Thank-you for this great recipe. I will enjoy it as soon as I can. It is better than the rat meat and rice I eat back in 1968.

Nopales (cactus leaves) with scrambled eggs are a delicious treat – add salsa or hot sauce as you like and serve with warm corn tortillas. Be very careful and use a sharp knife to remove the spikes or, do as I do, and buy nopales with their spikes already removed.



Prep Time: 10 minutes



Cook Time: 30 minutes



Total Time: 40 minutes



Yield: 6 to 8 servings



Ingredients:

•8 nopales (cactus leaves)

•1 small onion, finely chopped

•1/2 tsp. salt

•6 eggs, lightly beaten



Preparation:



1.Use a sharp knife to cut off the spikes from the cactus leaves, if necessary (be very careful as you do this). Cut nopales into 1/4-inch strips.

2.In a large frying pan over medium high heat, heat the oil. Add the onion and nopales and salt. Cook, stirring frequently, until nopales are tender and most of their liquid had evaporated, 15 -20 minutes.

3.Add eggs and cook, stirring, until eggs and nopales are combined and the eggs are set, about 5 minutes.

I have a cactus between my living room and dining room that almost touches the roof. It is only six inches from the roof now. It has grown about six feet since I bought it a couple years ago.. At the condo in Phoenix I have a huge cactus in the backyard that flowers as well as smaller flowering cactus. There are cactus in the complex boulevard, but I don't have to worry about them. The mexican workers do that. I tried peyote as well, but it didn't do much for me except make me paranoid. I guess it was because I was in the city instead of in nature.
