So this Avocado tomatillos salsa I made for tacos the other night, was SO frickin' good. Had the few leftover tacos tonight with it. Goes good with tortilla chips as a spicy avocado salsa. Was better than what I had at the Mexican restaurant from their salsa bar! So I'll share the recipe....



2 small tomatillos (husked, rinsed, chopped)

1 jalapeno (leave the seeds in for more heat, dont be a pussy!)

1 clove of garlic or to taste

2 medium avocados

1/4 cup fresh chopped cilantro

2 tablespoons of lime juice

1 tablespoon of olive oil

salt and pepper to taste



Put all that shit in the food processor and let it whirl. So fucking good!!!  

That's an interesting recipe..

I was honestly surprised at how good it was. I didnt start getting into avocado until last year. Even now its not something I would want much of. But the best 2 ways I've had it, is that salsa, and the breakfast thing we did. Split an avocado in half, remove the pit, egg white into the scooped area, then cheddar, baked in the oven, salt and pepper. Real good breakfast and healthy.



I want to use that salsa up, so I might do grilled salmon tacos with that on 'em tonight.

My brother is out of school for September, so it worked out on the timing. This will be the 2nd time I ever flew lol.
