I diced and pan fried two russet potatoes in a little canola oil and apple cider vinegar at work. I threw in some broccoli, and sliced Spanish onion. With a little salt added and garlic chive Greek yogurt dip, it made a tasty, quick and easy snack for lunch.

Had leftover chili last night, gonna save the rest for lunch at work, so tonight I had clam chowder and toasted cheese.



Also picked up a roast for pot roast this weekend. Was on sale 2.99lb. I'll put some of that McCormick slow cooker season in it, and some taters and carrots. Now I have that song stuck in my head, that goes "pot roast and kisses, so damn delicious" lol.

Tonight we're having traditional smoked hotdogs I found at a deli, with chilli con carne, avocado, diced tomatoes and onions. Mayo too.

Anyone here have a killer scalloped potato recipe?



I never make them cause they take forever to cook...I generally gently boil the potatoes for a bit and then slice them so they are half cooked....if I place them raw in the pan, they never cook....stupid potatoes...no onions but I perfer something cheesy baked.

This is easy scalloped potatoes.
