Going to do a brisket this weekend. The small lean end. Gonna go mix up the rub now. Rub it tonight and cook it tomorrow. Probably a 6 hour cook with an hour or so cool down, since its the thinner end. Yum.....

Cool on the brisket!



I was thinking of picking up a pork shoulder or loin and making some BBQ tomorrow. 10 hours in the crockpot. It has a dry rub and a liquid base too.



If I could wood cook it, I would. I've never cooked anything that takes a while on the grill.
I've come here to chew bubble gum, and kick ass. And I'm all out of bubblegum.

We just throw wood chips/pieces on the charcoal. We use a Weber Kettle grill. Indirect heat. Works very good.

How do you keep a consistent heat with the coals? Throw a few coals on every 15 minutes?

That's the way my wife does it. Add every couple of hours as needed. In the video they put down a big batch of unlit briquettes then they put burning ones on top. Lasts the entire time it seems. Cooking low temp they can last a while.

Yes...as opposed to using a pit that has a fire box on one end. We add wood pieces/chips that we soak in water. Works well.

Man, that will be good. I never had smoked brisket done at home. What a treat that would be for a condo dweller like me.

We should set aside a Staurday and do that..



It's a lot work, but I'm sure the result is worth it.

Once you get it started you only sop it every hour or so. Fat side always stays up. We rotate it when we sop it to cook it even with the indirect heat. Once you get the temp regulated and the meat on, sit back and relax or do other things. The sides shouldn't take that long.



We have some fresh pinto beans that we will make "Cowboy Baked Beans" with. Then we will make some potato salad. Typical sides for brisket. May throw some corn on the grill, that would go good for sure.

This is the bean recipe using Ranch Style beans and pork and beans. Really nice spicy heat level.

Just watched it, pretty cool! The rub and mop is similar to my bbq recipe. So you put some unlit coals down, then a batch of lit coals. And when y'all add more coals, do you add lit coals?

No. We don't do it that way. I want to try that but since it is her pit and she insists on doing it her way.....pick your battles and that ain't worth fussing over....LOL
